Terroir:
Climat/Lieu-dit : This plot takes place in an enclosure on the top of the hillside, in the locality called Les Crôts. Its name comes from the old French meaning « hollow », a name confirmed by the very steep relief. It is an old vine that produces few grapes. This cuvée is limited to 1500 bottles.
The Vine:
• Soil type : brown earth, superficial limestone with very pebbly scree
• Altitude : 320/340 m
• Area : 1,01 ha
• Average age of vines : 70 years
• Harvest: 100 % manual harvest
We are working according to the precepts of organic farming since 2007 and are in the process of certification.
Vinification & Ageing
:
Ageing : 12 months in French oak barrel with about 30 % new oak barrels
Type of winemaking : 30 % not destemmed, vinified in concrete vat tank for two weeks.
